Our Ghee got a major facelift in 2020. We started sourcing exclusively from a dairy out of New Zealand that is doing some revolutionary things. Using rotational farming and biodynamic farmings in a Geothermal region (fueled by volcanic activity), these Indigenous Farmers are not only cultivating their ancestral craft, but doing it in a way that makes us want to share their story.
All of our ghee is produced proudly in Texas, in an old fashioned way using an open top kettle. We have never and will NEVER use a centrifuge. We hot fill and cap each jar at 220 degrees to make sure that absolutely nothing but our gorgeous ghee is going into every bottle. Many other brands will use an open top cooling method to get a super creaming/waxy consistency but two major things happen when this is done: you lose flavor and you're exposing the ghee to contamination. Neither of which sound very appetizing to us
Our philosophy has always been to be true to the craft and heritage. You can expect a variety of consistencies inside each jar, ranging from liquid, to soft and grainy, to smooth and creamy. All of them are normal, and to be expected. Each batch WILL be different because we, at the end of the day, are making our ghee in small batches in the true artisanal fashion.
